I use undercooked whole brown rice also and it is boss. I also use whole oats though. I am in the process of writing a whole brown rice prep tek. It should be ready to post in about a week. Feel free to critique it after it is posted.

i've used whole brown rice before and it worked fine; looking foward to that tek
I usually "double bag" my panty hose bags and today I filled one up with 14 cups of dry WBS  For the record, there's no need to "double bag", I just do; the 50 cent walmart 'queen sized' panty hose are tough enough on their own; in fact, at one point I was forced to do the 'rinse cycle' while taking a shower, all the while holding a bag of grains;
I don't pick nothin outta of it, like floaters and what not, cause after full colonization...it don't matter, everything is colonized; however, this go around, I've been informed that my wbs may now contain some other shit(like corn, peanuts, and beans oh my) hopefully that shit will colonize as well, may let the fully colonized jars set for a few more days to 'consolidate'
anyways, after I rinse and 24-hour soak whatever grain I've bagged up in the panty hose, I simmer for like...uh...15-20 mins(?)
after that, I can let the bag drain naturally in the sink and then spread its contents out on cookie sheets line with paper towels and let the steam dry it out appropriately...

Whole oats...
No-soak prep. Boil 30-40 minutes, drain, allow outside to dry, PC for 90-120 minutes.
I like tossing a handful of gypsum into the boil water to help grains from sticking together

Yeah, I throw gypsum in my boil and substrates. Well, crushed gypsum board.

I never noticed a difference using coffee in the boil water.
