couple questions about humidity

I just recently started working with grain and am having problems with pinning (its taking a long while) my mycelium growth is doing well but when I transfer to fruiting mono tubs im not getting pinning. I think my gas exchange is good, but I live in house that is a work in process we dont have central air so basically what ever the humidity level is outside is the same as inside which is usually 20%-100% dailey and I havent really seen anyone else post things about growing in a similar environment. I have everything in a temp controlled fridge and have been misting twice a day (could that be too much for the already high humidity levels that are already constantly high?) also thinking about getting a humidity reader does anyone have any good recommendations on what would be a good make/model?
I started getting pins on some fully colonized PE that I put into fruiting about 3 weeks ago today but have no idea why that took so long

do you have a cabinet to keep a SGFC in? That might stabilize things

Your tubs need Fresh Air Exchange... is your tub in some type of modified fridge? It should be in a room with a fan preferably... and PE takes a bit to get it to pin, did you case it? Shoot some pictures and you'll get some good feedback.

Something to keep in mind... fae fae fae!! Not enough? Pull out those top poly holes and throw em at the wall! Lol.. I'd actually hold onto the poly, but you get what I'm saying. Keep the surface glistening with misting/no need awesome hydration, so you can have all the fae in the world
