Veil-break prematurely/ Ruined cakes?

I have read that mushrooms should be picked just before or after the veil breaks, as it means they are now mature. This is my first grow and I'm wondering if the veils broke prematurely.
Here is a picture of one of the cakes (This one is of the Mexican Dutch King variety):

From what I can tell, the white "ring" around the stem is the veil that's broken.
The mushrooms were put in the FC at the 27th/28th of May, so they've had around 2 weeks to fruit.
My questions are:
-Did they break the veil too soon or is this within normal time range?
-Do they look mature for picking?
-Do they look good or do they show signs of maltreatment or lack of FAE/light/humidity?
I also have another question, i thought I'd put in this thread as well, if it's alright:
Some of the cakes show no signs of fruiting. There's white cottony growth that's increased in thickness over the past two weeks. I'm afraid the mycelium might be dying or something if that's a thing?
Here are pictures of some of the cakes and the white growth:

-Are the cakes still good and is there anything I should do?
Thanks for your answers

Great, thanks. How about the non-fruiting cakes though? Should I just redunk them and try again or are they dead by now?

From what I've read and do, I pick them just before they open (i.e. before the veil is broken) or right after they open. The sizes of your mushrooms also differ, and there's not necessarily anything wrong just because they're small. Some are big, some are small. Once the veil opens, they should be picked.
At least that's what I've learned so far

Flowering branches grow some short some long.
Veils dont open prematurely they open precisely when they're ready.

BOOM. yes indeed OP they opened at just the right time for them. If size is important to you, look into bulk substrates and no they do not show significant "signs of maltreatment" as you put it.
Good luck to you.
