steam sterilization/ BRF Cakes

Im starting my second round of BRF/PF cakes, and it got me thinking. Ive read that when using a PC to sterilize, you want to leave them to cool off for a full 24 hours, but when using a pot and steaming on the stove, how long should you wait to innoc, and how long CAN you wait to innoc when done steaming?
Also, when waiting to cool them off, should you leave the jars in my SAB? im thinking that's the best place for them to cool off, what yall think?

Room temp is fine. You dont need to let cool for 24 hours from pcing. I usually do jars at night so when they are done I turn off the stove and inoculate them in the morning.

that's exactly what I think im going to do, I just finished them at 1035, so I think ill just wait till the morning to innoc. My problem is I wanna get them innocd now so they start growing already, my problem is patience, but ive gotten better at having it, especially since if you rush in this hobby, things get messed up.

I usually wait until the pot is not to hot then pull them out onto my counter(sterilized of course) and then it usually takes an hour or two for them to cool past 80f and then i noc them right away. But I have also left them in the pot with lid for a couple days before nocing them. I read somewhere they store at room temp for up to a week.

Contemplating the whole "chosen people" thing with just a flaming stealth banana split the sky like one would hope but never really expect to see in a place like this. Cutting right angle donuts on a dime and stopping right at my Birkenstocks, and me yelping... Holy fucking shit!

You need to wait. Thermal death is about 108F-110F They must be room temp. Unless you live in Alaska where room temp is 60F

ive been doing what the other dude does now, I steam them around 10-12 at night and then wait till like 6 or 7 to innoc, If I stay up until 3 they seem to be cool enough to innoc and I do it.
Im going to invest in a pressure cooker though for sure, seems to make life easier for a lot.
Also, im going to make the jump to a bulk/monotub, as I recently purchased 24 1qt jars, so I figured what the hell! Still kinda confused on the principles of it but I will definitely read up more
