I just prepped my WBS jars, too tired to pressure cook. can I wait?

Well, just rinsed off my wbs after a 24 hour soak. Simmered and let dry. Loaded them in there quart jars and capped then with sfd.  Can I leave them on the counter for 12 hours so I can sleep and clean tomorrow?

Very simple question that can be found all over on here.

But the answer is yes you can wait. Like stated, I wouldn't let them go anymore than 2 days max (if that even). They will start sprouting on you...lol.

Try to get them cooked as soon as you can, storing them in a fridge may help prevent them molding quickly. They WILL begin to mold within a day or 2 if they just sit out on a counter, that's the issue, not really sprouting.  However, even if they do begin to mold, give them a shake and then PC them for a little longer than normal(2hrs instead of 90mins) at 15-20psi. I've PCd a batch of jars that I didn't get around to PCing for 3 days after prepping. They got kinda gross with mold, but after a good shake and PCing they went on to be used just fine afterwards. Obviously its best to avoid this situation entirely.

If they started to mold you could kill it all with pasteurization temps. Extra PC time is done to deal with bacterial endospores. I would personally try to not let them sit for more than 12-18 hours. At that point the bacteria load in the jars will be very high and be the real issue. Go take a nap and then get to work.
