I read a post on the forum someplace, and it talked about eating the rice colonized substrate of cordyceps, rather than fruiting, does anyone have any information or experience on this, would appreciate it.

Most available species can be bought from sponsors.

I read that Aloha grows their supplement cultures on Milo or millet and achieve near complete conversion with that process. I'm sure brown rice would be pretty close as well.

I don't have either but I bet if you posted an ad in the Marketplace someone would drop you a line. Or..off the top of my head, I think OutGrow has it.

Like the nutritional benefits of eating the mycelium?

I think you just need to cook the colonized grain before you dry it to make it more bio available
