Forgot to put canning rack in pc...

Well I've done a lot of pc batches and never had a problem, but today.... 10 minutes from the 90 minute 15 psi mark, I noticed my canning rack (for the bottom of the pc so the jars don't touch the bare bottom) was clean sitting in the dish rack.
My pc is still hot, and there wasn't any cracking or burning smell... I'm afraid to see the inside of it when I open it tomorrow.
Have any of you guys ever forgotten to put the canning rack in the pc? What happened?
I know it prevents the jars from cracking or burning, but that's what I'm afraid of...

All 24 jars were cracked but holding together. I packing taped them up while still hot. Inoculated and got one jar that didnt contam.

Cutting right angle donuts on a dime and stopping right at my Birkenstocks, and me yelping... Holy fucking shit!

Hope for the best, expect the worst. I'd start soaking new grains, or prepping new pf jars, just in case. Odds are, some cracked or the contents got messed up. There's a reason why everyone says to elevate the jars.

Hey just wanted to update so people could use this as a reference one day.
17 pints jars in pc, forgot pc canning rack and all jars were fine! None cracked, nothing burnt. But yes I won't ever forget again. I can't believe I even forgot this one time.

So whats gonna happen when you need to bust up the grains in the jar? I would rather start over than have to be the person having to bang around 2 dozen cracked jars.

What media were you sterilizing? Single layer of jars, or were more jars stacked above the bottom jars?

Rye grain, pint jars, stacked up. All of them were fine, I guess I'm just lucky.

Canning rack also known as a "Trivet". How one forgets it is odd.. Its what you gauge the water level with... You don't want your jars bottoms submerged in boiling water.. Cracked jars possibly, but bursted seed most definitely. Why was your trivet not in your cooker to begin with.. I've never washed my pressure cooker nor has the trivet ever came out.. I have another pressure cooker for food if you are multitasking with your PC I would then understand. But I assume most people here don't use a pressure cooker for its intended use.

it's ok to have up to a few inches of the jars in the water. just as long as the majority of the jar is touching the steam. Steam transfers the heat but the jars being a bit in the water is no problem.

One time I was halfway through a 24 jar batch of RGS and I had to run off for an exam, I left extremely detailed instructions for my room mate (not a mycologist in the least) for how to finish off my PC'ing while I was in class.
He forgot to add water to the PC and forgot to turn the heat down
Ruined my PC and blew up 12 jars

Can't trust anyone with your projects.. People find the most fascinating ways to fuck things up...
I left a SGFC for 3 days once and told a roommate to mist it 3 times a day. He probably misted once the whole time, I came back to a blue substrate...

From my experience this is a bad practice. No reason to have that much water in the cooker to begin with. Grains will always burst when in boiling water. When I pull my jars out the next day after a cook i can lean my jars over and all the grain (WBS) spills over. I bet you can not do that with a jar that sat in inches of water. You will have to shake it!

either way only steam is penetrating the filter of your jars. and only steam is doing the sterilization. sounds like your grain prep isn't dialed in every time.

Heat is what is penetrating and sterilizing. Steam temp to boiling water temp varies. One could most definitely sterilize a jar with out a filter..

heat is a concept. what carries the heat is the latent energy of the steam. some 1600 volumes of steam condensing into 1 volume is why we steam sterilize our jars not boil sterilize.
you sterilize jars that don't have a filter in liquid media which takes far less time to process. agar for instance only needs 10-15m at 15psi. all canning recipes are in liquid.
latent heat doesn't raise the temperature it's pure energy carried by the steam. at higher pressures you can cram even more than 540 calories per gram of water>steam those extra calories in thermal energy bombard into your jars when you sterilize something like hydrated grain not in liquid.

I have to lol at this.... Heat is a concept? So what you just rambled was what? Calories in water? Energy in water is not described in calories.. I must assume you know what sterilization is. So you must understand that it can happen without steam and/or pressure.. Im slightly amused by your exert. Agar vs grain is apples to oranges.. Whether right or not it doesn't matter. If you want nasty slow colonizing grain go ahead a put inches of water in your cooker lmao! Try using it for its intended use and you might learn something different.

I've had water up a few inches on the sides of my jars, and they did fine. You can have water on the sides of jars and not have "nasty slow colonizing grain".
But I've always had something on the bottom of my jars, not always optimal but it worked fine.

Maybe from your experience, but not dozens of others...lol. It will hurt nothing to have water partway up the sides of the jars. As long as it is not so high it gets into the jars.
That being said, it is PREFERRED by most, if not all experienced growers to have a little extra water in the PC vs. not enough. Who the hell wants to stop & depressurize a PC just to have to add water if/when it boils dry? Your post didn't make much sense to those of us that know our shit...lol.
I looked through your posts since you started posting 2 days ago and the questions you have been asking seem very elementary for someone appearing to be give such sound advice...
We try to do it right the first time around...
