Really, the biggest difference is that bacon typically comes from pork belly, and prosciutto is made with the leg and a lot more thinly sliced.

I love bacon every bit as much as people rave about it. I'm a huge meat lover, I could basically survive off of meat and never get tired of it (meat in general, I still need variety in type and preparation technique). I cannot do that with any other type of food. I actually just use vegetables and shit as filler because living off of only meat would be pretty expensive.
Taking that even further though, I NEVER get tired of of bacon, not even just the basic skillet cooked variety. I have never turned down a piece of bacon in my life. I cannot tell you what it is that I love so much or what sets it apart from every other piece of meat, all I can tell you is that it is apart from every other type of meat for me.
Once while stoned out of my mind I cooked up like 1-2 pounds of it and ate the entire thing, and then still wanted more.
For me it doesn't even have to be the top dollar shit. I love cheap bacon just as much as the expensive shit.

Unfortunately you cant live off pure meat. Your bowels eventually shut down and rot out on you, something unpleasant to go through. Its a nice concept though.

How's this then, I prefer just regular pork belly over bacon. Bacon is too salty, and personally the over saltiness makes it taste not that good. Kind of like eating beef jerky or something.

yes bacon is great. made bacon wrapped smoked jalepeno poppers tonight for a dinner party. also added extra bacon to smoked baked beans.
cant go wrong with it , though in all honestly i dont eat it allll the time.

No. In East Asia, we eat pork belly on top from a grill as BBQ, or braised over hours. We don't eat it aged like ciccioli. Although I would try that if I ever saw it on a menu somewhere.

I think bacon is overrated and usually bacon is just better as a side on its own rather then added to anything. For me, bacon is something you add to a dish because you need more fat not because you want extra bacon flavor.

That sounds awesome. I recently had grilled pork shoulder (not BBQ style), and it was great. I really like the texture, reminds me a lot of cheek.

I think a lot of people overly express how much they like bacon. I really don't know anyone who's going out of their way to make it. It's kind of a pain in the ass. I do like it and enjoy it.
The whole bacon trend thing is pretty much just that. One time my friend randomly got some bacon popcorn because he thought it was funny. It was the nastiest shit ever. It smelt identical to bacon but you could just tell it was artificial and weird.
Now other cured porks are amazing. The bizarre foods where he is in Italy is almost like a dream come true. A lot more better meats then bacon.

Once I tried a variation on rice krispie treats with bacon and some more sugary cereal substituted for the rice krispies (froot loops?) Someone who was a coworker at the time made them as a joke. Not something I would make but they were at least edible.

Bacon is okay every once in awhile. I did go overboard for a period of time and was eating it a couple times a week :vomit: I got tired of it pretty quick and switched to turkey bacon and sausage links. Turkey bacon tastes good and also not a pain in the ass to cook since there's less grease.
I'd much rather eat a good steak or pork chop like Bhodi said

A BLT or a club sandwich is pretty killer though.
I remember once I ordered a "Subway Club" at subway and it was some nonsense with roast beef and other random cold cuts. Pissed me off, why use "club" in the name of a sandwich that bears no resemblance at all to a club sandwich.

Um, I love pork belly because it is a huge part of Asian cuisine that I grew up with, especially Korean BBQ.
Personally, I believe the best way to cook pork belly, is with just a little salt and pepper, and grilled over charcoal or wood fire.
Sometimes, the simplest foods are the best tasting. Take toro (fatty tuna belly) for example. One of the most expensive items on the menu at the sushi bar. All you need is a little bit of soy glaze brushed over it, and you can charge $22 for 2 small bite-sized slices of it.
Also, I don't know where you are getting pork belly from where it only costs 50 cents for the whole thing. I buy them from the Korean market (which is way, way cheaper than American grocery stores), and it's still $5 per lb from the Korean market. I'm sure you have a much better connect than me though, because you actually work in the professional food industry.
