I've heard from a few different people warning about trichs and spaghnum moss. I wanted to plant some dragon fruit cuttings and moss is what I have available. Can anyone elaborate on what the issue is?

What exactly is it that you have heard?
-------------------- "The period of Prohibition — called the noble experiment — brought on the greatest breakdown of law and order the United States has known until today. I think there is a lesson here. Do not regulate the private morals of people. Do not tell them what they can take or not take. Because if you do, they will become angry and antisocial and they will get what they want from criminals who are able to work in perfect freedom because they have paid off the police." - Gore Vidal, "The State of the Union" (1975)

Probably the fact that it retains a lot of moisture.
Trichs and dragon fruit are very forgiving, and can take lots of water,so I'd use it.

Trout said something about ow it harbors bacteria, it's been a while since I read his book (notes), but I don't think he gave much detail.

I've used peat moss for an in ground trichocereus plot located on the sunny side of the house because I couldn't find coco coir. When it rained the perlite floated to the the top because floating is perlites kyrptonite. which left us with a swamp and no cactus on the sunny side. The cactus on the sunny side ended up in 15 gallon pots because only peat moss and natural soil remained after we cleaned the perlite up.
If I used peat moss I'd mix it with atleast half perlite.
At your local sand company you can possibly pick up turface which is the medium they lay on baseball fields. Turface has been reported better than perlite.

Trout's work is kind of a joke. I would not put too much stock in it.

Bacteria?, Fungus?.. some of those things form cooperative relationships With the plant.
Sterile media is really only essential when possibly starting newly rooted cuttings (from water or gel), and when starting seed. (as some seeds are picky about germination, with regard to what kinds of bacterias and things help start them off in life.).. Some plants like Proteas from Africa, and Australia are in fact super hard to germinate without the minerals and chemicals found in (smoke). Anyway, the most important thing I can say about soil, is research what kinds of native soils your plant grows in. Does it come from a cloud-forest? Like some Trichos, and can stand a kind of soil that has some organic matter. . . or is it one that comes from the open desert, with high mineral gravel? Cacti can be very finkey, about flowering with regard to soil mixes. Some kinds of cacti, also will not bloom real well without having a good ratio of organic material along with the mineral-gravel.
Best thing I can say is read up and research the species you have, the environment they come from, and what they enjoy growing on (best). Trichos, are fairly forgiving as cacti go. I just had 2 days of rain, with my largest 2 Pachanoi plants outside in it drinking up the water. Peat is not a BAD choice. It just tends to be a bit acid in the PH, which is ok for things like Blueberry and huckleberry plants..However for other things you might need to ammend the soil, with some sand, and maybe some agricultural-lime/crushed limestone.

Spaghnum moss is different from peat moss.
Spaghnum moss retains to much moisture for most cactus to safely thrive in it worry free. Normal peat also will retains moisture but its harder to rehydrate after its gone dry, which is probably why coir is more popular. Coir is also more sustainable.
If you choose to use it, cut it well with something else like stated above.
