I would think it more likely to be some other chemical additives, preservatives, or some other substance they have an allergy to though.
I wouldn't hate on anyone who goes gluten free though. It's a very challenging diet and they're just trying to figure out what makes their body feel bad.
EDIT: Gluten itself doesn't provide any vital nutrients.

"Gluten itself doesn’t offer special nutritional benefits. But the many whole grains that contain gluten do. They’re rich in an array of vitamins and minerals, such as B vitamins and iron, as well as fiber."
Sooo sorry I worded it wrong. You get the point though.
Personally I think the "feeling better" for the people with normal immune function is either A. Placebo. B. They are so use to eating shitty food that by switching to gluten free they are already eating way healthier there for feeling better. Nothing to do with the wheat protein. I do find it funny that gluten gets more hype than preservatives and all that though.

I completely agree.
But I still leave room for the potential for some people to actually be sensitive to gluten without having celiac disease or a wheat allergy. Just like I'm sensitive to tomatoes and chocolate. Digestive systems are complex and weird.

Of course, its good to see some common sense on these boards now and then. People seem to think you either can eat all the gluten you want with no problems or you can't eat any. Like most conditions, it presents as a spectrum from very little to very severe.
I do agree it has become something of a fad, many who are not gluten sensitive at all get on the fad. But wheat is not a great food, avoiding wheat I can see. Oats and some other grains are much better unless you are sensitive to them.
