Since it is everyone of the tubs, I am certain it is because You did not mix your spawn in thoroughly enough. Did you layer the spawn? Since you are at lower temps, it also makes sense that the mycelium has not reached that part yet if you did layer your sub. I can't tell about your contam question without pictures.
I would turn it into an experiment, If you really want to fruit some put a couple into fruiting and see how they do, that way you do not put all your hard work at risk but you still get to satisfy that urge. Colonized subs are fairly resistant to contams and i am curious to see how the tubs would match up.

yeah, pictures will help greatly, but also sounds to me like you didn't mix the spawn well enough. I don't layer, but use gloved hands to mix my bulk and spawn VERY well before I let it sit the 2 weeks until fruiting.

Fruit them now. Listen to the mushrooms, not some guy on the internet.
And yes, mix your spawn more thoroughly with your sub.

Thanks guys. You're the best.
It never even occured to me that I might not have mixed it well enough. My new pasteurization method allows me to dump the whole bag of substrate in the tub at once, whereas before i was pasteurizing substrate in jars with my PC, so it was easier to mix as I spawned.
I'll do better next time.
I think you're right 36fuckin5 about listening to my mushrooms. And I also think you're right rmshroom about testing out fruiting with a couple bins first.
