Robbing Starbucks....1st time Oyster grow.

hey folks. So I've posted a few times in the edibles thread but this is it. its on. I just walked down to Starbucks and I have about 20 quarts of coffee grounds pasteurizing on the stove as we speak. I know coffee is not the ideal sub, but it works and it was accessible to me. We gotta use what we have, right?
Anyways once it cools I will be mixing it in a large pail also "borrowed" from Starbucks, with 9 quarts or so of Blue Oyster Spawn. The pail will have 2 inch holes drilled throughout for the mushrooms to sprout out of. I will be placing the pail in a large plastic bag to provide high c02 for fast colonization. In a couple weeks when it is fully colonized, I will be taking it out of the bag and hanging it in a tree that received shade and a gentle breeze.
It seems to be more common for people to fruit their oysters in bags or laundry baskets. I guess I could of done this but I had the pail taking up room in my shed. So I used it. Will this make much of a difference?
My only other question is this...should I give my Oyster spawn a 20 minute soak before it is mixed with the pasteurized sub? Frank advises this for cubes and I've done it many times successfully.
Any advice would be appreciated! If anyone knows of a bulk pasteurization method to use, post up, because I'd like to do more bulk oyster grows soon. Using RRs method of jar pasteurization makes for a lot of clean up. I've heard good and bad things about using pillowcases.

Sorry I'm a bit too spaced out from work to reply to everything. We spent a few months trying a commercial project using grounds last year but eventually decided we'd be better off using sawdust. We had some (unreliable) results with 20cm diamter columns of 3-4 kgs that we pasteurised (in their plastic bags) inside something like an RR steriliser. It was pretty tricky to get an accurate read out for sterilising without having a probe for the inside (core) temperature. Also the grounds are so rich that they contaminate very easily and get stinky quick. Pasteurising in water using bags or whatever to filter was a non-event because it was almost impossible to get the grounds dry enough to work with afterwards..
