Oysters on straw, fruiting questions.

Hi all, I have some questions about growing on pasteurized straw and wanted to clear a few things up.

First of all it seems from everybody's pics that most growers leave the plastic on the log and fruit through slices in the bag. Is this so you can have a lower RH in the grow area? I peeled the plastic off my logs and the grow room is staying at 90% RH and up, seems to be pinning OK.

Also, do you put you logs in the grow room as soon as they have finished colonizing or do you wait until you see pins?

I just don't really get how so many of you seem to have oysters fruiting right through the holes in the bag. What is your technique?

How big are your straw logs?

Is the pinning going well?

I have tried it both ways. Taking the plastic off seems to make them pin all over and you have smaller fruit compared to slits in the bag which makes bigger fruits out of the slits only.
Make sure the bags are packed very tight or the fruits will pin underneath the bag. If the bags are packed tight then they are forced out of the slits.

Yes, the logs pinned like crazy but there is black spots on many of the stems. I am thinking there was too much moisture and they might have blotch. Keeping my eye on them.
