How long until pins fully mature?

I am using the PF Tek and a SGFC. I am growing Amazon cubes, I have been fruiting them for the last 6 days. I have them on a 12/12 light cycle, and have been misting the cakes 2-5 times a day depending on how long it takes to evaporate. The temp has been about 74-80 degrees and staying at about 50-57% humidity. Last night I started noticing my first pins forming, today many more have formed and the ones I noticed last night have at least doubled in size. They are about 1-2 cm long and getting pretty thick. My question is this: 1. How long until the pins fully mature? 2. How do I know when the fruits are fully matured and ready to be harvested? 3. My cakes are all quite close together (Small fruiting chamber) so the pins are just about touching the other cakes and they are still very small. Will I run into problems if my growing mushrooms happen to run into the other cakes? If there is any other information I can give to help determine how long it will take for my pins to mature please let me know, I will gladly provide any information I can. If not, please provide average times for pins to fully mature. Thank you in advance for any and all advice/answers I may receive.

First of all, if your using an SGFC why is your humidity so low? Do you have a few inches of perlite that you have rinsed and strained?
1. My amazons went from pins to fully mature in about 8 days. However, don't expect yours to be exactly the same, too many differing variables.
2. Harvest when veils are just starting to break or about to break for potency. Harvest when caps flatten out (much after veil breaks) for printing.
3. You might want to have a little more space between them (at least 2 inches apart from what I've read). Possibly making another SGFC will fix that.
Just be patient man, your fruits will grow faster than you expect.

I just finished my first grow and am by no means a pro but about 7 to 10 days. You almost literally watch them grow. You know there done when the caps open up and the viels break.

Good info above 
He's probably using a shitty hygrometer and the reading probably means nothing. A well maintained SGFC will not have that low RH.

Sorry, I didn't really post that right. I have my thermometer outside of my fruiting chamber so it only reads the temp and humidity outside of the SGFC. It reads 56% humidity currently but the chamber has been evaporating the mist and creating much condensation inside the chamber for almost a week now. And I do have about a 2 inch layer of damp perlite lining the bottom of the chamber. So I'm sure the humidity levels are much higher inside the chamber. And as for the space between the cakes, I have about 1 inch between each cake. Will this cause any problems? Or just cause them to grow together and be relatively more difficult to harvest?

Condensation is from a temperature differential...not from the mist evaporating....
If your SGFC has condensation, then there is a problem.....there should never be condensation in a SGFC.

The tek says 3-5"....not 2".....
Do you have 1/4" holes every 2" in a grid pattern on all 6 sides?(this includes the top and bottom)
Is the chamber raised so that air can pass up thru the holes in the bottom and up thru the perlite?

As I said above, I have a small fruiting chamber so the only way to fit the cakes in and not have them pressing against the lid was to put only 2" of perlite. I do have 1/4" holes every 2" in a grid pattern on all 6 sides, as the Tek Instructed. The chamber is also raised and on a sort of open rack, so there is definitely proper air flow through all 6 sides.
