I have one of those Presto food dehydrators, but it doesn't allow for temp control. Think it'll be ok?

Good to know. I was worried that it might get too hot, but I guess the point of dehydration is that it is slow, low heat.

Question about FAE exchange. My original plan was to have my roommate fan the cakes while I was at work, but he recently broke his leg and can't get around too reliably. Would putting a box fan on low in front of the fruit chamber be sufficient for FAE while I'm at work for 9 hours a day? I'm just not sure if this is a bad idea or not. I made just a normal FC with a grid of holes on all sides and perlite in the bottom.

No, that would just drop your RH and dry your cakes out. I've used a SGFC successfully working 8hr shifts. I would just mist and fan when you can. Mist if needed before you leave for work.
