 - Five gallon bucket is my cover - one inch holes 4 inches part - fluffy stuff isn't that tight

Well that's different.
Maybe one drawback of this would be that the fruiting surface is pretty far away from the perlite and might not get as much RH, but I could be wrong.

At first I thought casings didn't need a fc then it kept getting dried so i placed the Bucket that I originally had for oysters that failed so i used that but it didn't help so i poured some water on the casing then a lot of pins popped which made me think that the Humidity was to low. So I murdered an innocent teddy bear to cover the holes.

Casing refers to the casing layer, this is a cased tray. They need a fruiting chamber same as anything else, unless youre around to mist a lot.
If it were me I would put it in a traditional SGFC but I dont see why this FC wouldnt work

Yea man the trick is to allow maximum frequent air exchange without drying out the substrate. This is the basis for a good FC. You could fruit a tray right out in the open but you would have to be around to mist a lot.
This is the beauty of polyfill, you can adjust how tight it is stuffed into the holes to dial in the amount of FAE your substrate gets.

The perlite will be useless unless there are holes in the bottom and its elevated to allow air to move up. I don't think that is going to be an optimal setup though it will probably work well enough to get a few lanky fruits.

I don't know. I never really worked with buckets and I can't say how the airflow is going to work exactly in that setup. All I do know is the perlite ain't gonna do much and I doubt your sub is gonna produce enough heat to cycle the air through your poly well.
The only person that is gonna be able to dial it in is you, through trial and error. This is why we recomend sticking to proven setups that people are familiar with. I know no more about how well its going to work than you do.

Yea the perlite is pointless. Also the pot takes up a lot of space, so only the air above the pot can move around. I think it would be better if you took the sub out of that bucket and let it fruit from the sides like a giant PF cake.
If you want to use perlite, drill a bunch of holes in the bucket lid raise the whole thing up 12".
