Perlite is often over-kill for casings. Water droplets all over sounds like too much to me. What is your air exchange like? Too little air exchange can cause skinny shrooms. Better air exchange might can cure the humidity problem. You might can leave the lid open slightly at all times. Or, you might want to remove most of the perlite and just use a small container of perlite to provide moisture. Many people can get by with no perlite depending on the ambient humidity in your area.IOW: Yes I think your humidity is too high. Might use more fresh air to help with the proportioning of your shrooms.
