it isn't spores germinating it's actually just mycelium. Mushrooms are mycelium and when they're no longer fruiting (tertiary mycelium) it goes back to colonizing (secondary mycelium) what you're seeing is just normal mycelium. Next time if you don't want that just throw it into drying before they make more secondary mycelium :P
