hey peeps,
I'm entering the beginnings of mushroom cultivation. I have jars, sterile corn seeds, and the basic set up for a pcorn tek.
Upon pressure-cook sterilizing, some of my jars filled up more than usual with water.
in the picture shows how much extra water is in the jar. I have not inoculated these. Should I empty the extra water in the jar on the left?

Try not to over think it, if you are considering dumping out the excess water, then do it and get on with knocking em up, just be smart about it (like use a Still Air Box or Flowhood)
Good Luck!

to cover carefully the pcorn in case something gets through the lid. the tek followed was the pcorn tek. thanks to your question, I have realized it would help to do away with the aluminum for more air flow.
thanks for the suggestions!

If you have proper lids, nothing should get through them.
Colonizing jars need GE (gas exchange), not FAE (fresh air exchange).

Just stuffing a punched/drilled hole with polyfil would do better. A synthetic filter disc is best but a filtered hole should be what you use for gas exchange from now on.

One way to to save your sub is to transfer the wet corn to another sterilized jar with 1 tablespoon of verm on the bottom but only using a SAB or flow hood.
However, getting a sterilized jar would involve PCing the jar so you're not saving much time. Another idea is to open the wet jars in a SAB and adding 1T+ verm and shake.
Unless you're real stubborn I'd recommend starting over. Good luck!
p.s. to answer your original question there is a high degree that a wet substrate will contam. No sense wasting time.
p.p.s Also, you filled your jars with too much corn. Need room to shake so only fill 2/3 - 3/4.

This is why I weigh my jars and write the weight on them. If it went in 300g and came out 350g I would microwave it to drive off the excess.

I monitor moisture levels quite a lot, especially if I think what I am doing might need to be monitored, e.g. that water may get in.
I often add too much moisture on purpose. I have a PP5 tub that fits snuggly into my PC. I can add a kilo of grain to that. While it is still hot I can take it out and add the hot grain to smaller jars which have been microwaving with water in them. The water is poured out, grains added and then they are microwaved, to drive moisture off and to heat treat the grains again to treat any airbourne contaminants that may have fallen on them.
