Help: Stalling Jars

Hello. I was wondering why the mycelium in these PF-tek jars (specifically the first one) are stalling to completely colonize the substrate. The first front jar has had only a dime-sized space left to colonize but has stayed the same for about 2 days.

I've read that it may be due to lack of fresh air. The jars have two layers of tinfoil, with the underlying layer having inoculation holes. How would one allow fresh air inside without the risk of inviting contaminants?

You could remove the upper layer of foil and replace it sterilized Tyvek. Alternatively, you could remove the upper foil and put band-aids over inoculation hole. Band-aids breathe-able and sterilized, and somewhere there's a thread about it, but I don't have experience to say that this would work well.

As long as you have a dry layer of verm, the tinfoil or tape isn't needed. How long have they been colonizing?

There is a dry layer of verm, but you're saying that it can be completely exposed without any sort of lid as long as the dry verm layer is there? Seems like it would be left exposed to a large amount of contams.

And those jars have been colonizing for a good three weeks by now.

All of this right here is what most people would recommend, you will get a great amount of information on cultivating by checking out those three links. The guide you are using is terribly outdated and somewhat inaccurate or misleading to current standards.
