When/how to harvest poppies

My poppies are starting to bloom and I had some questions about how and when to harvest them. Would there be a benefit to scoring and collecting latex and harvesting the whole pods or is it better just to pick one? How long after the petals fall off should I harvest the pods I read 5-14 days but is there a better indication? If I want to get some seeds would I just let a few go to maturity and collect seeds from those?

From what I have gathered one should wait until the crown of the poppy is significantly angled upwards, I have some still fattening weeks after they lost their petals.
Though some of mine also dried out a bit and got overheated which may have sped up the flower petals falling off. Seems like all of mine are getting bigger though regardless.
I still have some that have yet to flower, and many just flowering, but a couple flowered at least 1-2 weeks ago and are going strong!

No problemo, just what I have heard. I would be interested to hear others opinions too.
I love how my poppies look too much to cut any, it seems pointless too since I can just dry em and harvest the seeds and save the pods+ seeds.
I guess you could do that and cut for latex

Ehh. Just kind of a project. There wouldn't be seeds from a single plant anyhow would there?

No idea, this is my first year growing poppies.
Depends on if they are self fertile or not I guess

Ok, so if you harvest the whole pod would you do it before the pods open (when you would otherwise lance them) or do you wait longer?

Like I said this is my first year growing them so I really don't know much 
When do the pods open I had some in my garden that were left all year and the pods never opened.
Here is a pic I found on the wiki poppy tea page of some mature harvested pods:

That is way more than I thought it would be, the crowns angle I mean. Some of those are basically fully upright I guess mine have a bit longer left indeed.
Also those are some fat pods, I need to get some in the ground next year. I have some mega miny pods

I'm not sure if Ghost is talking about the 'pods' opening up into flowers (which is NOT when you lance them), or if he is talking about after they flower and form pods (which IS when you lance em). If you let the post-flowering pods ripen up, they open up little holes right below the crowns where the seeds can be sprinkled out.
Look below the crowns here-

That's just what I've read, anyway. I've never successfully grown poppies...

I'm asking if it's best to harvest the pod before it's fully mature and the seeds fall out. I would like to collect some seeds, if the potency before they are fully mature and after is the same I might as well let them open all the way and collect the seeds and then harvest the pods. If not then I'll harvest most of the pods before they open and let a few mature all the way and get the seeds from them.

I believe the standard thing to do is the second thing you mentioned.
Harvest before seeds falling out and let a few keep going to get seeds.
But again, I may be proven wrong by a more knowledgeable member...

If it is a question of (potency). By all accounts I know of, Its best to harvest most (herbs), right before they bloom. the reason being, that is the time, when they have the highest amount of volatile/essential oils. (generally speaking). Because after that the plant is sending nutrients to reproductive parts, developing seeds etc.
Now, with Poppies. . I have always just waited for the seed caps to ripen and drop all of the petals. If you intend to (tap) them for latex, make sure you get them before the pods start to wither or brown. the latex will not flow if too over developed. In other words, you want to make sure the pods are still somewhat green and alive, (have nutrients still flowing to developing seeds). some people tap in the early morning, and collect at mid day. . Others say tap them at dusk in the evening, and collect the latex in the morning.
Some of us plant on Lunar cycles, and harvest on lunar cycles too. there is the belief in Some parts of middle east and Asia, to wait till the night of the full moon, to "tap-the-poppy".
