so during fruiting on the totes, are you planning on leaving the plastic bags around them as well?

No the plastic is just for colonisation. I'll fruit them in my GH.

Fantastic little step by step here. Thanks for writing it.
Couple questions:
Do you take any precautions against contamination after the straw is done pasteurizing, or is this unnecessary? I mean, you want the sub to dry and cool a bit afterwords. Do you just leave it out in open air for this?
Colonisation and fruiting. I'm still not sure how the environmental conditions differ. Right now I have a large section of my basement that is sealed off air tight. I'm going to be regulating air flow, humidity, and light. Can I go from uncolonized substrate to mushrooms all in this one room by manipulating these variables? I'd hate to have to construct another room.

Where do you get the Healthi Straw? Their site only lists dealers in the mid-west.

I just let it cool in open air. I considered covering it but that would slow the cooling process. I colonise in a cool dark corner of my basement and fruit in a 4'x 8' walking green house on the other side of my basement. The green house gets a lot of both natural and artificial light. The humidity stays above 80% and it gets several full air exchanges per day. I try to keep temps a bit lower for fruiting but that can be a challenge sometimes.
Healthy straw is produced very close to where I live. There may be a similar product where you live but chances are the further you live from agricultural areas the harder it will be to get pre shredded straw.

i had the same thing happen in a sgfc with those blues.
i even went an extra step and put some polyfil holes lol

oh was that one recent? i had tried the sgfc by itself but it failed 3 times. so i drilled some 2" holes and put poly hoping for a pipe dream. i have better luck open air on the table spraying the fruits directly a few times a day.
