excellent muda. the one thing i hate more than anything in cultivation is cutting straw. ive never had space to have a wood chipper, so it was always difficult to cut. id pay extra for the pre cut straw. it saves time and headache. that straw size is absolutely the perfect size. where most people run into problems with straw is the length and size of the straw. long pieces end up colonizing extremely slow and dry out. then, the top of the straw will not colonize. this often happens if the moisture isn't quite right. i used to actually soak my straw overnight for 12-24 hours prior to pasteurization.
which type of oysters do you plan on growing?
i like the layering method your using. i use this quite often with oysters. it works really well with straw and newspaper. have you ever contemplated using logs? it may not be ideal for the grow space you have but those sock logs are pretty user friendly to create. but the bucket grows are awesome! this looks like fun. can't wait to see the results. ive got a pearl and blue ready for spawn when i get back in town.
are you going to fruit them open air or in a greenhouse?

I'm using blue and Mediterranean oysters. I had thought about logs but buckets work better with my space. I'm going to fruit them in my green house. Currently it's full of lions mane,king oyster and reishi bottles. So I only have room for 30 buckets in there. I should have it expanded considerably by the time I need more space though.

Very Nice Write Up Muda! Thank you I'm going to start my first oysters soon and I'll be looking back here. I recently had better success (meaning no contamination after several flushes) with pasteurization as it is normally done (hot water bath with some soap as a wetting agent) but I also threw in some hydrated lime. It changed the color of the straw and seemed to have softened / broken it down a bit. I found the hydrated lime... In the canning isle as a pickling agent.

hey Nobody This is what I used. I tried to find hydrated lime at garden stores and hardware stores and in the end ... there it was in Walmart. Pickling Lime. I'm sure any well stocked grocery store would have something like this in the canning area. I paid about 5 or 6 bucks for a one pound bag. Unless you are doing a LOT of substrate I think a pound would go a long way. It is very reactive stuff.

Ive had a lb that i added to my seed prep soaks. It lasted more than 5 years worth of grain prep.

I get mine at the gardening store cheap for a decent sized bag. I use it to pasteurize my straw and never had a problem and the bag had lasted almost a year. Cold pasteurization

I read about using detergent in a few places. Aloha medicals mentions it on there site and I've seen lipa post about it. I have a 5lb bag of lime I use to buffer peat moss casings but it only has 30% calcium which is really low for pasteurisation.

 First pins 11 days after spawning.
I also did a smaller batch using two 5 gallon pails in place of two garbage cans. I used it make this smaller bucket sub. I cant remember what kind of oyster spawn I used.

The Mediterranean Oyster buckets are kicking ass so far.
  
No pinning on the blues yet.
I also did a scaled up version of this prep method using 55 gallon totes instead of 32 gallon trash cans. I used 10 gallon totes in place of 5 gallon pails. I'm hoping these totes will make better use of my fruiting space.
