Fungi that could be used for brewing beverages?

Besides yeast. I got this Idea as I was dozing off this morning.

I want to try replacing yeast in a beer recipe with a mycelial culture of some other, probably fruitbody forming, fungus. I know some fungi put off CO2 and might actually be able to produce some carbonation.

Any candidates for species that might make for an interesting fermented beverage?

it may be that some Acetobacter species can be used to ferment a beverage without the symboitic yeasts.

I think all mushrooms put off CO2 (I'm not sure but I think alcohol too). The only thing is that yeasts are more efficient in converting sugars to alcohol and CO2 then higher fungi.
A fermented drink from medicinal mushrooms might be very interesting - just be careful for contaminants before you test such drink. You should pasteurize it before!
