Best way to grow San Pedro?

Is it more potent if you grow it from a cutting or seed or does it matter? Also how long will it take before it's ready to harvest?

No. Makes no difference. Pedro's vary in potency, it's a coin toss.

That's just about unanswerable. Depends on the care it gets.
From seed to full maturity. Years, and years.

Each Seed carries a unique phenotype which separates an individual from its siblings - thus making potency a roll of a dice.
If you grow from seed and test for alkaloids you can determine which one has higher percentages & then you can do what many people do - name their clones.
That's how we got N1 bridgesii & possibly others- from my understanding people have to do many years of seed growing if they want a strong clone of their own- or just buy a cutting.
Regular Pedro's are a crap shoot unless it can be vouched for -- even then, each cactus has its own make up of chemicals so its still a crap shoot.
Seed grown plants are awesome because there is usually a few phenotypes per batch and you'll fall in love with the variation of a single plant.
Trichocereus from seed grow moderately slow ; you can speed things up by grafting to pereskiopsis although that is a timely process as well.

The best way is to grow both from cuttings and from seeds, then you get to experience all growth stages at once. If you're really after potency, then try getting some bridgesii as well.
