The jar is all white except a small spot. Is this fully colonized?

nope not fully colonized! draw a line around it with a sharpie and see how long it takes to grow in that area.

it looks like there are some exploded grains in that area. maybe you over cooked your grain?  the reason it's not growing might be because it's really wet or maybe it's infected.

Look at the metabolites in the top.  I would call those jars colonized and I would spawn them if they were my jars.

Anytime I have seen metabolites in my jars they have been there when I have waited to long to dump my jars.  All of the food has been eaten and the mycelium is excreting waste.  You can wait just to be sure, but my experience has shown me that when  jar looks like that it is good to spawn.  I don't know for sure though.  I am just telling you what I think.  I am still learning too.  Until you see someone with a TC tag responds to your post you should just consider what is said as an opinion.

What I'm trying to say is that if it were me I would spawn those jars, but maybe I am wrong. Hopefully a TC will see the post and tell you yay or nay.

I think mycelium did advance a bit but very slowly, in the last 10 days.
Could I simply remove this  part, and try to case anyway?

You need 100% colonization before spawning.

like i said, draw a line around that area and see if it fills in over the next 4 or 5 days.  it's probably due to excess moisture in that area or contam.  this same thing has happened to me and if you're just patient, it'll fill in over the next 4 or 5 days.  if it doesn't start filling in over the next 4 or 5 days, toss it.

It's bacteria in that area. Very normal for grains. It's usually a race for either mycelium or bacteria to win. In your case the mycelium is winning. All the wet looking grains in the mycelium already is where it colonized through the bacteria. Like said before wait a few days to a week. It'll be ready soon.

Although it'll look wet against the jar like the other grains, wait for the mycelium to be all around it before spawning. I pressure cook my spawn for 2 hours instead of 90 minutes to reduce bacterial endospores, like the ones you have there. Just a heads up for next time.

A properly pasteurized bulk substrate has beneficial microbes that fight off bacteria. That's been my experience. Once in bulk bacterias never the problem. Some say it weakens it so it's more open to contams but i think if it's done right, it'll just take it over no problem. Like the bacterial looking fully colonized jars I've made haha.

That's just a myth. Light doesn't do shit for pinning. It's giving the right microclimate. 99% surface humidity is what makes pins and in the sides where the mycelium isn't against the wall there's definitely 99% humidity. I mist or case and stuff bottom holes tighter than a high schooler to achieve surface humidity. Also it's easy to work with side pins on a tray. They're so small and easy to pick up and work with on the counter. Side pins are a bitch on monos because you have to reach into the bin
