homemade chocolates

hey all, making some homemade chocolates for the holidays (wink, wink)... we melted ghiradelli (sp?) chocolate chips but after awhile it solidified...

is there a better chocolate or way to do this? we're trying to melt it enough to pour in little molds.

Are you trying to melt the chocolate in a pan directly over a heat source? If so you'll boil the water out of the chocolate and it'll end up scorched.

Fill a saucepan with water and put a bowl over the top of the saucepan, put the chocolate in the bowl.

The water in the pan will boil and heat up the bottom of the bowl melting the chocolate, but the bowl doesn't get hot enough so that the water evaporates from the chocolate. Mix in the additives of your choice :wink: so that it is evenly distributed and pour into your moulds. :laugh:

we did that (put the bowl of chocolate over a pan of boiling water). maybe we left it on too long and it got so hot that the water did end up boiling out of the chocolate...

so maybe a slower heating technique?

thanks for the info guys!

i had actually made a post a little while back explaining the result, but being that the shroomery is a little buggy right now, it didn't save the post.

anyways, for our second batch we bought baking chocolate and melted it the same way we did before, in a bowl over a pot with boiling water.  it was definitely much more liquidy than the first time with the regular chocolate chips, but as soon as we added our magic, it noticeably solidified.

all in all, it worked out fine.  we just had to get a little hands-on in the chocolate, rather than just pouring out the chocolate into the molds.

i wonder if we had waited too long warming the chocolate and some of the water boiled out, or if it was what we added that solidified it...

oh well, should work out just fine for this holiday season :wink:

I made my chocolates in the microwave with regular chocolate chips. Just heated them one minute at a time while stiring till all was melted and then mixed in the mushroom powder.

I made my chocolates into mini cup cake papers. They were pretty damn fun to eat...

maybe it was the amount we made... we ended up putting 21 dried grams in at once, in about 4 cups of melted chocolate chips (4 cups was the volume necessary for our chocolate molds).

we aren't upset about having to try again :wink:
