OK follow it all except when the casing goes on fruit completely open in the shotgun instead. Otherwise just follow the instructions.

How about you don't sterilize and just pastuerize instead? Or ditch the whole straw and whatevs and just do a simple CVG bucket tek.
Sterilizing the substrate will make it more susceptible to contams. This is why you are probably experience contamination in this process. Proper pastuerizing substrate is the way to go as it leaves the good bacteria there and bad bacteria goes away.
As mushpunx said, break up the corn on a car/bike tyre or with by banging it on something with a little give (I used the arm's of my old sofa) instead of stabbing with a knife and ruining a perfectly good looking jar.
I would let the corn colonize. Break it up. Prepare some pasteurized substrate, put it all in a tray.
I don't know what the next step is, whether it is letting it colonize or put on a casing layer so please some one with a little more experience in SGFC chime in on this one
