How can I avoid having water under the mycelium in my containers?
I use straw spawned by pop-corn and put about 4-5cm of straw in thoses
containers.
Any help is greetly appreciated

Apply a (fairly dry) bottom layer of casing material or pure vermiculite.

Yeah -- you can also put drainage holes on the bottom of the container, if you want.

The best way, IMO, is to only mist as much as you have to. Try using a bit less and a bit less each time -- you only need enough water so the casing layer doesn't dry out. You should be able to tell when the casing dries out because the colour lightens.

you mean puting dry vermiculite in the bottom of my container before spawning straw? I didn't about that! But for holes, i'm not sure that this is applicable in my case.Thanks guys !
