I'm making root beer.

I bought some root beer extract at walmart the instructions are for 5 gallons, but I scaled it down for one 2-liter bottle.

I put 6cc of extract in 2 liters of water along with about a cup and a half of sugar. heated that to kill most of the bacteria and stuff. and added a sprinkle of yeast.


It's fermenting right now, and should be ready by tonight or tomorrow.


THing is, I only had baker's yeast. I need to get me some champaign yeast, which is cheap, it's like $.50 a pack, but I can only get it mailorder, and they want to charge me $5 shipping.

in australia i think we call 'root ' beer ,ginger beer which is a non-alcohol beverage.is your recipe alcoholic?

My recipe id fermented for carbonation only. It has less than a half a percent of alcohol.

It's made of cherry bark, and wintergreen, and some roots, possibly ginger. It origionally was made with sasafrass roots, but the FDA banned anything containing saffrole because it is a carcinogen. It may still contain some saffrole free sasifrass root extract.


Here's an old recipe:

Ingredients
Instructions

1 cake, compressed yeast
5 pounds, sugar
2 ounces, sassafras root
1 ounce, hops or ginger root
2 ounces, juniper berries
4 gallons, water
1 ounce, dandelion root
2 ounces, wintergreen


1. Wash roots well in cold water.
2. Add juniper berries (crushed) and hops.
3. Pour 8 quarts boiling water over root mixture and boil slowly 20 minutes.
4. Strain through flannel bag.
5. Add sugar and remaining 8 quarts water.
6. Allow to stand until lukewarm.
7. Dissolve yeast in a little cool water.
8. Add to root liquid. Stir well.
9. Let settle, then strain again and bottle. Cork tightly.
10. Keep in a warm room 5 to 6 hours, then store in a cool place. Put on ice as required for use.

Anyone, just make note that yeast can only be added when the recipe is at room temp., other wise the culture is killed by the heat, this was a common problem that customers would call in about when i worked at a home brew store in nyc, for some reason it was common for custoners to boil the yeast, or add it at hot temps.

How long ago did they ban it?

When I was in Boy Scouts way back when, I went to the Scout ranch in Philmont, New Mexico. 

One of the things we did at one of the camps was make our own root beer.  Using sassafras root.  Good stuff.

I actually was telling my girlfriend about it the other day, and reminisced about making it again.

1960. It has to be treated first to remove the safroles to be sold commercially.

I wish I knew how carcinogenic it is. I might want to try using some of the ample sassifrass I have all around me.

My root beer was pretty good. It had a strong sulphury smell, but the taste was fine. It gave it a kind of subterranean quality.

That was probably because I used Baker's yeast. I got some brewing yeast on the way and 3 more kinds of extract.

Hagbard: Care to elaborate on the technique for brewing it? There's a sassafras tree in my backyard and I am intrigued.

Also,
1.what prevents it from becoming alcoholic? Yeast type or do you somehow end fermentation early or what?
2. Its my understanding that safrole has some psychoactive properties as well, hence the addition of caffeine to root beer when it was banned. Thoughts/experiences anyone?

It was ok. I think it would be better if I could carbonate it without yeast.

hmmm, does it have a real yeasty taste or what?

my unlce made it a long time ago, and it was awsome, it was the old school type, i guess...he used those old groshl german beer bottles...groshe? grolsh? i forget the name

Yeah, and not in a particularly pleasant way either. Even with good yeast. It may be the water here too. The yeast seems to bring out a sulfury taste in it.

Grolsch bottles are the best bottles for brewing anything.

At the bottom they have CO2 chargers and Soda Siphons. $42 for the Classic Glass and Steel Mesh Soda Siphon is expensive, but if you plan on making a lot it could be worthwhile.
