Large fruits won't dry

What would you do if you had a flush of really large fruits and after 48 hours in the dehydrator on 95 deg setting they are still not cracker dry? Is it ok to jack up the temp a little? It is really just the large stems that are a bit bendable and rubbery feeling.

turning the heat up is fine. they need to be cracker dry, no bending at all.

In the future you can always slice them a little prior to drying.

No need to slice them.....keep 'em purty...lol. I crank my dehydrator up to 160f... then seal them in a ziplock as soon as dry. The less time exposed to the open air the better.

Dehydrator temps are fine... I'm pretty sure temps have to be like 300f or more before you need to worry about degrading the actives.

Leaving them exposed to open air allows for oxidation so you want to store them in an airtight ziplock or other sealable container....  :thumbup:

Actives don't break down until the 300fs.

I just dehydrate at 160f for 12-18 hours meaning I forget about it and wake up in the morning like :uhoh:

I usually put in ziplocks then in glass jars. Within glass jar I put desiccant packs. Then store in cool dark area.

I found if you dry them part of the way in a dehydrator and then switch them to a desiccant chamber with a shit ton of desiccant they get cracker dry overnight. Like fill the entire bottom of a Tupperware full of it and just have a metal screen slightly above the desiccant. I've dried massive mushrooms of all kinds this way.
