It's a Vietnamese noodle soup made with seasoned beef-broth. My all time favorite soup. In fact, gettin a cravin for some right now :wink:

It can be alright I guess. My only problem with much Vietnamese restaurant food is that it's often frozen cuts of meat or frozen prep which is just popped in a pot or microwave. Broths are made from fake bases.

Used to go to Pho75 weekly with the family when I was a kid. Kinda strange considering we arn't event vietnamese or anything but it is good soup. I went mad trying to find it in kansas, but they just can't get the spices right.

mmmm pho. Anyone have a decent recipe? Went to china town a while ago and picked up INSTANT PHO FLAVOURING, ended up tasting way too clove/cinammony.

I don't know a great deal about pho variations but none of the ones I've had included cloves. I believe that's more of an Indian flavoring (even though cloves are actually not native to India). Most of the pho I've had has been a clear beef broth (not sure how they get it that way) that has been flavored with star anise, cinnamon, and ginger, but never garlic. Also in any pho there is some kind of onion-type flavoring (like onion,shallot,scallion, whatever) which is included. that's about all I know, but I'd definitely recommend home-made over canned. peace.

Yeah, when I go out to get pho rarely do I taste clove but this instant pho flavouring had a dominant flavour of clove for some reason, along with that more traditional light cinnamon flavour. I have a bad tendency of pouring in too much hot sauce and that sweet black bean sauce into my pho, rarely enjoying the actual taste of the pho hah. Have you tried mong(not to sure of the spelling), its sold at most pho places its noodles with spring rolls, varying vegetables, usually bbq pork and at times tofu, pretty tasty.

it's an anytime meal. I've always thought of it as a more lunch thing.
the pho places here put strips of flank steak in.. they also have tripe and stuff if you're into that....

I'm not sure how that would work, I don't know much about vegan cuisine, is there an imitation beef broth, like maybe something using soy? I suppose if that's the case then you could just use that, use all the rest of the spices, and just omit the beef strips (but keep the noodles). wish i could be more helpful but i really don't know. peace

yeah, the broth could be substituted, I don't know about the beef strips, though. are they thick, meaty strips, or kind of re-hydrated jerky stips? what is really the the irreplaceable trademark essence that makes pho pho?

I believe it's (essence i mean) just this: some type of onion-type flavoring, ginger, cinnamon, and star anise. not sure of the ratio though. in terms of the beef it's in thin strips, at least the pho that I've had. peace
