slight "sour" smell from cake?

Let me start off by saying that this is my first successful birth after two failed attempts. The first was ruined due to negligence of sterilization on my part. The second was due to my friend dunking in room temp. water. On my third attempt, the jars were waaaay too high in gypsum content; I experimentally added a scant 2/3 cup of gypsum to a single BRF mixture without researching first. Needless to say, I didn't have much luck. I had one cake fully colonize after about two months, and I tossed the rest. I just dunked and rolled my only cake a couple of days ago. The cake is starting to show primordia on the top and patches around the sides. When I opened it up to mist it, I gave it a sniff and it gave of a very distinct smell of mycelium. However, I noticed an accompaniment of a faint sour smell; almost like the BRF cake was fermenting. Is this just the normal smell of cube myc, or do I potentially have bacterial "squatters" on my cake?
--(My father smokes in the house and I get a similar faint whiff off of the ashtray now and again. The "Chamber" has four holes stuffed with cotton balls for ventilation. Could it possibly be the smoke permeating the cake?)-- I've checked a couple other posts, but none of them are really answering my questions, and I'd rather have feedback on my experience than just trying to relate to someone elses; it could be a completely different scenario. I'd really like this to be a success, but at the same time I'm not trying to poison myself, so give it to me straight, doc. Thanks in advance.

--EDIT--: Cake was dunked for 24 hours. I've read a couple of posts that say their cakes, when dunked for 24 hours, came out with a sour smell as well. I wouldn't say that it's a strong sour smell; It took me about three or four whiffs to determine that what I was smelling was slightly sour. I've also read that if a slight sour smell occurs, leave it open and fan the hell out of it. Any input?

Wait, you're supposed to rinse it after the dunk? I thought it was just before.
 I've already rolled it and it's started to colonize the vermiculite already. Is this going to pose problems? Any idea on what I should look out for?

yes always rinse after the dunk,it's common for bacteria to build up during your dunk, shouldn't be a huge issue but that smell would have went away right away

Okay, so basically what you're saying is that it's not really that big of a problem now that it's said and done, but I'm probably going to have a hard time smell-testing my cake?
--Or it's most likely fucked and I should toss it at the first sign of trouble?

Quick question for anyone that can answer it: I have dry perlite in my chamber. It should be wet, shouldn't it? I do live in the desert...

Yes most definitely the perlite should be soaked and drained, it holds the moisture that will keep the humidity up in you fruiting chamber.

Say I was misting my chamber and a few heavy drops accumulated on the fiol my cake is sitting on, should I worry about it?
My concern lies mainly in the formation of "wet spots".
Still pretty new to this; I don't want my own ignorance resulting in failure.

Yeah don't worry about the smell, some people had great result using both fermenting methods (with/without o2), its ok at this point, but while Incubation the mycelium will run slow because the low o2, high (co2,acid)level
