Spawn Cakes Troubleshooting PF Amazonion / Orissa

Hey y'all. First i'd like to give a big thanks to the broader community and especially RR and the other mods who give up a lot of their time and energy and advise to this community.
So I have two quite large spawn cakes. They were started in popcorn, neglected a bit, and eventually transferred into large spawn bags of hpoo/coir mix to try to make the project easy for a friend. Friend had mixed success so I took them back. They began pinning inside the spawn bags that have a small breather port. but things have been VERY slow / stalled developing into mushrooms and I was getting lots of aborts. After some time I decided to expand their breather port using poly foam, eventually deciding it would be best to just birth them into an old monotub frame with a perlite bottom (kind of borrowing from PF-TEK using hpoo spawn cakes and a tub)
I have experimented quite a bit using different amounts of FAE and spraying them with a fine mist of H20 manually with a spray bottle. The two hpoo cakes - One is original PF amazonian the other is Orissa. The PF cake has produced maybe 10 fully formed mushrooms in two weeks. The Orissa has yet to give me a healthy one. Temperatures are in the 68-76 range most of the time.
Not sure why things are so slow. My humidity is too high? Too low? Too much FAE? Too little? They don't like being misted on directly? Light is just indirect sunlight coming from a window (no direct sunlight). Pins have been steadily increasing on both and fruit bodies on the PF amazonian cake as well. But something is clearly off, or its just a weak culture. Is it possible there's some kind of contamination going on i'm not seeing (ie bacterial)? I do notice that as I pick the fruit bodies they have a slightly beige tint inside the core. Suggestions and or insights here are greatly appreciated. Included two photos.
nearest is orissa furthest is PF Fanaticus amazonian

Even with the 6 existing Poly breathers on the tub?
What is suggested? Occasional fanning / wafting?

apparently lol, you can see it at the base of your fruits and if it isn't that you may have a vert issue

verticillium mold is a mold that will attack your fruits, i don't think you have it but it is a possibility and you will know for sure by the time they mature as with vert you will see spots that look like they are rotting on the stems often

While i'm on the thread.. How photosensitive are they. If i'm checking with a medium brightness flashlight in the PM for say, <1 minute at a time is that enough to disrupt them?

Light from a flashlight is not a problem for the cakes if its only for a little bit. They like a 6500k cool white light on a 12/12 cycle. But a flashlight is OK.

Taking pictures of your mushies is the last thing you need to worry about.
