Definatly not enough fresh air. Oysters need alot more FAE than cubes, otherwise they grow like that. its the cap thats desired for eating, those dont have much cap at all.

Once they pin and start growing, remove the lid of your fruiting chamber and mist often along with FAE

Pardon the thread hijack, but I'm facing a somewhat similar, yet not quite identical, oyster issue. I grew two bags of oysters on bran enriched sawdust + gypsum. They colonized quickly (~ in 2 weeks) and are now sitting in a greenhouse. Humidity is >90%, temperature varies from 21-26 C (70-80 F), lots of natural light (in a room with floor to ceiling windows). The greenhouse has the zippers unzipped up to the first shelf. Humidifier is inside, on the bottom shelf. Several times a day, I unzip the front and fan the whole thing with an electric fan.

Here's a picture of my odd looking oysters.



Note that they look different from the ones in iamtheoreo's pictures. The stems are not super long, but the cap is tiny. They all get to be about this size and then stall.

Any thoughts? I have fruited these to proper form a few months back by using a plastic bag with a bunch of holes in it as a ghetto humidity tend. I figured a full-blown greenhouse with a humidifier and all that would make things better...but I must be erring somewhere.

That looks like a combination of insufficient air exchange, insufficient light, and too warm. Try opening the greenhouse all the way up.  Oysters can tolerate lower humidity far better than insufficient fresh air.  They also like nice bright light.  They do best at 55F to 65F.

ok so i have my brick dunking now and tomorrow im gonna birth it again, but this time im gonna take off the lid after they pin.. and another question how can i keep them blue they looked so vivid when they were smaller

Little update...

The temperature here dropped to ~ 68.5 F (20 C) and the oysters seemed to have liked that quite a bit. I also unzipped the zippers almost to the top, as per RR's suggestion. The only catch is that now I have to run the humidifier 24/7 to keep the necessary humidity.

Also don't forget the nutrients the mycelium finds in the substrate... If the substrate is not nutritious, then don't wait for normal Oyster mushrooms as well. It happened to me. Lond stems, though is lack of Fresh air in most of the cases and not fully mycelium growth. In case the mycelium is not fully colonized, it won't flash... From my personal expierience, I waited extra 30 days for the 1st flash due to not fully colonisation of the straw.
