Birthing shiitake PF cake?

######CUT TO THE CHASE BELOW (actual question)######
So back in Nov. 2014 I bought a sawdust shiitake block from the local hardware store.
The block appears to have been inoculated on June 20 2014.
I followed the instructions (from what I could understand in Japanese).
Those instructions included: - opening the filter patch bag. - rinsing the cake. - removing the invitro fruits and aborts. (is invitro even the correct term?) - dunking the cake for about 10 hours. - finally placing the block in a vinyl bag and spraying once a day. - keeping the block out of direct sunlight and in a temperature between 10-20 degrees Celsius (50-68F)

I skipped placing the block in a vinyl bag and put it in my SGFC with most likely 90-100% humidity. About a week later I got some developing fruits. I dunked this cake once more. I got many pins but the overall harvested fruit was less than I expected.
Anyway I collected the spores from these fruits and decided to make some shiitake PF cakes. (1/2 pint jar) -20ml rice bran -70ml hardwood chips -70ml shredded hardwood -5ml gypsum -?ml water topped with dry verm
#########THE CHASE########### Inoculated on Dec 31st 2014. The jars have been at a constant 26 degrees Celsius(78.8F) and in the dark with probably no airflow. All the jars seem fully colonized but the mycelium doesn't seem dense.
So my question is should I birth these 5 cakes or leave them in the jar and just remove the lids?


If I do birth should I roll them in verm? Also what is this letting the block dry out and develop a brown crust about?
Should I put them in my SGFC or just in a room with at least 50% humidity? I don't have long until the temps get above 20 Celsius inside.
I'm kinda worried about these spots on 2 jars also.

Wait for them to brown on the outside and then you could leave them in the jars. I'm not sure if dunk and roll for shiitake would even be necessary. It seems like their brown skin of dead mycelium cells would provide the casing layer.

You probably would have been better off making a clone from some of the fruits and saving spore prints for messing around with later. With a clone you would have had guaranteed genetics. From what I gather obtaining a fruiting strain from spores is difficult with Shiitake. Still there is a chance you will have some success. Good luck!

Your right about a clone. I just haven't spent much money on other methods. My trials with anything other than cakes has seemed to fail. I can always go to the hardware store and pick up some inoculated dowels, logs and a drill bit haha.
Yes hopefully the cake browns and I can get some fruits.
I did find another post that was too similar to my dilemma.
I got gyms to fruit from cakes so we will see!

It will brown when you give them air... My 2 cents is to let them sit a bit more, take them out as cakes and straight to fc. Or crack the cap on jars to make them brown a bit then take them out of the jar and into fc. They tolerate CO2 surprisingly well but not low RH, Atleast in my experience.
As for the jars in question, take them out and rinse in running water, fruit as normal.
