AA PC cooker always seems to be at 14 psi?

So I've been doing some PCing with my All American 921 I recently purchased and it seems like to get the weight to be a steady rock and not constantly letting out steam I have to reduce the temperature to a point where it seems to be reading 14 psi on the gauge. Is this cause for concern or do you guys have any ideas why that may be the case? Am I putting too much water in, too little water in, should I increase the heat to reach the full 15 even though the rocker is going crazy letting go steam every few seconds?

Using a presto, ever since i got it i had troubles getting it to 15 psi, even letting it heat up for 10-20 extra minutes wouldnt do it, so in the ind i taped a coin to my weight, probably just 50 gram or so extra, now i get to 16-17 easy

Ignore that temp gauge, and use the rocker instead. If youre PC is constantly letting out steam and rocking full throttle you're going to be dropping your pressure(possibl) and you'll run your PC dry.
My PC says by the gauge that it only gets up to 13 psi, but I trust the calibrated rocker weight over that gauge.
I PC for 120 minutes just to make sure, anyways.

I use a 23 qt presto and I taped a quarter and a nickel to the weight so it doesn't start releasing steam until about 18 psi. Some people say this is dangerous but it is not.

What is your elevation? Like how many feet above sea level do you live. This will change the outside atmospheric pressure and you might have a 1-2 degree difference from the gauge to the weight. Trust the weight not the gauge.

Gauges can be slightly off but the weight never is. That type of gauge is made with a few PSI tolerance. Also you can run it at 14 psi (weight almost never rocking) and it will still work fine.

What exactly did people say is dangerous? Adding weights to gauges can certainly be dangerous. If someone specifically said what you did is dangerous they might be wrong, I am not familiar with the model & restricitons.
Somebody else mentioned adding 50grams, depending on the PC this could result in a huge increase in pressure. I calculated the weight I needed to add to mine, the manual said it could be run up to 29psi. The PC has secondary safety features which can suddenly release pressure.
If the PC is a weighted type if the hole was 1 square inch it would need a 15lb rocker weight, if the hole size is 0.5 square inch it needs 7.5lb. The holes are usually a lot smaller and so the weight is too.
If something like food made it up to the exit hole and dried on rock hard and partially blocked it then you should see an increase in pressure, since your weight is too much for the expected cross section area.
If an added weight suddenly fell off it can be dangerous. Like if your tape came off due to heat. The force of steam coming out could feasibly move the PC around and it could possibly fall over.
In this video you can see it looks like a valve was venting which caused the PC to fall on the ground and then explode.

Maybe silicone the quarter on instead of tape.

plug-in resolved. The SEAL RING clearly blew, I've had it happen to me before. Had the rocker been removed the force would have gone straight up, and would not have created enough force to do anything dangerous. That thing moved because a large section of the seal ring blew, releasing all the force at once. Eno, keep on rockin.
Nothing was venting in that video before it blew, this is what can happen if your seal ring shrinks and you have to wiggle it around to get it to seal properly. The force of internal pressure can cause the ring to un-seat from a perfect to an imperfect seal, causing a blow out. Solution, replace the seal ring when it shrinks too much.

The temp difference between 14 and 15 psi is literally just a few degrees. I don't think it makes a difference at all.
