Shiitake blocks ready for fruiting? (pics)

My first go at Shiitakes. These blocks look ready to go, but just wanted to see with you guys since there's still a little Myc on them & I've read some people wait until they see the first pins forming before they cold shock, rinse and slap.  Should I wait? Or get these fuckers going?

They look ready to go to me.

What I would do, if they are in a somewhat sanitary environment, is slit the bags to increase air to the blocks without entirely exposing them.  This will aid in the browning.  After a couple days, I would dunk, if they feel a little light, and chill for 24-36 hours, then strip and fruit.

Awesome, thank you. I read a thread here where that was recommended, as long as you have enough humidity in the room, I'll throw my humidifier in the room and give that a go.
