Problem with ac unit

I have been searching for hours and can't seem to find a related post, so I am sorry if this has been discussed before.

I set up my grow room 2 years ago, it is a 12 x 16 space and have been growing oysters for sale at my local farmers market. Everything usually runs smoothly without a hitch except when it come to cooling. I have been using a 5,000 btu wall ac unit and it does the job, they just keep burning out on me. The wiring gets moisture on it and they fry.

I have seen posts on spores getting in the ac unit and gumming it up, I have torn mine apart and don't see any buildup, the wires are clean just wet.

I am on my 3rd ac unit and this last time I was in the building when it went, snap, crackle and pop, then smoke. Really don't want to burn down my building so any help on how to prevent this or something else I can use to cool would be greatly appreciated.

Are you cycling the grow room air through it or are you bringing in fresh air?

The grow room air will be at a very high humidity, which will then condense on any cool part of your AC unit causing it to short. Also it will be very inefficient without some way to remove the heat from the unit itself.

The ac unit is mounted on a wall that is the divider wall between the mushroom room and a storage area.

I am assuming (not from the US so don't know the units) that the hot side is on the outside and the cool (evaporator) side is in the FC. Your issue is as I said the high humidity is causing more condensation on the interior of the unit that it is designed to take - or it is just cheaply built!
Before you start using the next unit pull off some covers and spray down the electrics  with some form of insulating water repellent - as a last resort WD40 but you can probably find something more suitable as WD40 will keep evaporating and smelling.

I really haven't fully utilized the space in there yet. I am manly a vegetable grower and needed something new and different to sell at market that other vendors didn't have and it has worked out well, I love working with mushrooms and talking to customers about them. So I will be using more of the space this summer. I was only growing about 10 - 12 pounds a week.

Have they been well received at the farmers market? Are you the only vendor selling them?

It was a challenge to get customers to try them. I got a lot of remarks saying that they won't try them because they could be poison. I had to explain that they are grow inside and not wild. I cant tell you how many people said they hate mushrooms and when I asked them how they had them they say " you know the ones in the can at the grocery store". So it has been a lot of work getting them to try them and now they are steady customers. I spend a lot of time talking about how they grow and talking about different recipes and ways to cook them. I am the only vendor at our market selling them for now.

Great info. Having recipes for them is a good idea. It's it a large farmers market? Do you sell your 10 pounds a week there?

Most of my experience with HVAC is auto related but im gonna throw some ideas out base on theory alone. A/Cs have evaporator cores in them. Its the large radiator before the vents that blow cold air into the room. During the exchange process the temperature difference between the air passing over it and the refrigerant flowing through it causes condensation to form. If its running at a high duty cycle..like all the time, it will produce large amounts of condensation over this core which drips off the core. Hence why your car leaves puddles of water everywhere when the A/Cs on. House hold units, i've been told can produce gallons in a day in high humidity areas.

Im gonna take a guess and say this is where the moisture is coming from. If its not properly plumbed/routed out of the AC box it will accumulate. Does the unit have a drain hose? Is it clogged? Can you see the lowest points of the evaporator core? It will run down pipes, hoses or drip right off a low spot on the bottom of the core sometimes. Does it have a collection tray?
