Keep seeing these guys as I am hunting chanterelles and want to be sure I'm not ignoring something tasty. Sorry I don't have a pic of the stem but it is white and has a sac like volva

Looks like an Amanita, so probably not

Could be Amanita vernicoccora which is edible. Or maybe even A. velosa.

Seeing the stem/base is very important for Amanitas.

i never took interest before because it's an amanita but there's just so many of them now that I'd be remiss to find that they are a delicious treat.
Ran-D: I'll get a better specimen next time. Have you ever eaten an amanita? Ive read some of them are really tasty

So I went back and collected some more of them but I want to be absolutely sure that they are all A. Velosa. The larger ones have a fishy smell and none of them had an annulus.

All of your photos are Amanita velosa.
The one you need to watch out for is Amanita ocreata, which grows in the same habitat at the same time of year. One of the best things to look for is the bulbous base - with Amanita velosa the stem will be equal and not enlarged at the base once you peel away the volva. In Amanita ocreata, the stem will be bulbous even after to peel the volva away.
Also Amanita ocreata rarely has a striate margin, has an annulus and slightly different colors.

This mushroom tastes so good that I usually cook it by itself and serve as a side dish. I don't add anything except a little salt.
Other mushrooms that don't taste like much require more elaborate preparation to make them taste good.

That's what I was thinking but I wasn't sure if there was some ingredient that would really bring out the flavor. I've got enough chanterelles to keep me busy anyway. : D

Very nutty and savory. I fried them in olive oil with a little salt and it was heaven.

Even better than truffles? I've never had them but I always assumed they were the best because of how unreasonably expensive they are.

Some MSG never hurts. I heard that MSG can make random Amanitas from section Vaginatae taste as good as A. velosa or A. muscaria. I have been meaning to try it but I haven't yet.

A couple weeks ago, my housemates caught me cooking with MSG. They noticed because I spilled some crystals on the table, and it doesn't look like sugar or salt. Surprisingly they were all very much in support of my decision to add MSG to the salad I had made. I thought at least one of them would have bought the anti-msg hype, but no, they were like....good idea! They said the salad was so good that it didn't even need dressing.

They are in a different league than truffles. You don't eat truffles, you use them to flavor other foods. Some people love truffle flavor and other people hate it. I like it, but not enough to buy truffles or use them in my cooking. Everyone loves Amanita velosa, except for the people that hate seafood.

Haha yeah my girlfriend was skeptical when I told her that they were the most delicious mushroom because when I had them sitting out the whole house smelled like fish. That's interesting about MSG I never thought of it as anything other than the bad stuff in Chinese food.

Hey found this guy outside my house an I'm thinking its A. velosa but want to be sure. The white cap make me think it was A. Ocreata at first but I noticed a little tint of that salmon color plus no annulus or bulbous base. I'm assuming the color fades in the sun, is this the case?
