two questions, Is that mold in the first four pics? looks like trich. its on the top and its green.
the last two are pictures of a G2G from a jar that was pinning. Should i scoop the shrooms out? cause its only about 30 % colonized. they are in the center of the jar pictured.

Both are most likely contaminated. The first one is trich. The second is most likely trich also that you can't see yet or bacteria. Work on your procedure.

it's an organic coffee filter. I have polyfill stuffed in a 1/4 inch hole and then two coffee filters taped on top.
What is the right way? This is the only way i know

If that's the case, then just lose the coffee filters and duct tape. They are doing 100% of nothing to help your cause.
Edit: There are several ways to improve your lids. Polyfil works fine, but filter disks are really the way to go. Short of going that route, you might want to looking into making your own filters using either Tyvek or stiffened felt.

Doubtful. The fact he used a coffee filter means his procedure is definitely not up to par. Invest in tyvek or sfd and make sure you are prepping/PCing your grains correctly. As long as your inoculation source is semi clean you will be good.
