Need a good Fried Rice recipe

I've searched the internet and came up with TOO many recipes.Anyone have a favorite?

Mushroom and Wild Rice.
Get yourself some assorted dried mushrooms, 1 can beef broth.
Soak the mushrooms and save the juice, saute them in olive oil with garlic and shallots.
Make the rice per the directions but use 1/3 mushroom juice, 1/3 beef broth and 1/3 water. Stir in the sauted mushrooms durring the last 10 minutes of cooking and your done.
Another old favorite is Chicken Rice Caserole. Its layers of wild or white rice (your choice), cream of mushroom soup, pan seared chicken breast and toped with bisquits.
Bake it all in an oven for an hour and when its done serve it with french style green beans... Good stuff.

I can tell you about the most common one they use in china. Over there, fried rice is made from left over white rice by stir frying it with oil, a little soy sauce, bok choy, and maybe some roast pork if they don't eat that separately. Don't know the exact ratio or amounts of ingredients but it is more delicate than the fried rice you see at most Chinese restaurants in the US (not authentic Chinese food in my oppinion but that's just me). here's a recipe for fried rice that my dad taught me how to make
use some day old rice soy sauce 2 pieces of garlic, minced 1 onion, diced 1 egg scrambled salt pepper vegetable oil wok
1. heat your wok at medium temperature and add oil when it's hot. 2. put minced garlic into the wok and brown. 3. add onions and cook the pieces till they are clear. 4. add rice and mix onions/garlic throughly 5. add some soy sauce till all the rice is covered and looks brown 6. add the scrambled egg 7. sprinkle salt and pepper to taste...
you can also add stir fried veggies to this rice or any types of meats such as diced pork (char sui tastes good), chicken etc.
i have pics i took when i made some fried rice but i can't be arsed to get the CD with the photos i'll post those later

Actually, most of the fried rice in China (Hong Kong could be the exception) is made without soy sauce, and usually consist of scrambled egg, chopped scallions and chopped garlic. Day old rice is the key to good fried rice, your rice must be free of excess moisture. After making your rice, just spread it out on a sheet pan to cool in the fridge overnight.

Try making fried rice crepes. This is a recipe my Vietnamese cooking teacher taught me. The fired rice part recipe can be anything, then you take beaten eggs with a bit of extra water and coat a pan with alot of oil and then fry the eggs in a thin layer until cryspy. Then take them and roll with the fried rice inside. It makes the rice into a nice looking package. The egg wraps can even be made into pillows.

I'm just going by what I saw being made in Tianjin (North of Beijing). I spent a summer there and that was how they made it. You might be right though, since I was only in the Northern part of China and provinces such as Xinjiang and Sichaun probably have different syles. Peace

thats how we make the egg crepe but after rolling it up we thinly slice it then mix it through,but i still can't get my fried rice to taste like takeaway.
