A food dehydrator is one of the things an experienced grower should have in my opinion. Getting your fruits cracker dry in less than 12 hours.

I'm curious what'll happen if someone has to step away incidentally for like 16 hrs and there's only one "on" mode

They'll be extra dry.  No worries.

The RH in my home also gets very low during the winter. It's about 24% right but I've seen it get as low as 15%. At times like these you can certainly get them cracker dry just by air drying, no need for a desiccant or dehydraotr/oven. It still takes a few days though.
