Blue Cakes

I know that if a cake is touched or bounced around a bit it can turn blue. A friend had 5 cakes he kept in the oven for incubation, his wife turned on the over before realizing the cakes were still in there. The next day the bottom of the cake, where it got the hottest were bluish/green. He decided to open the cakes to see if it was green mold or not. Once the cake was out the mycilum seemed to have just turned blue/green. He has had two flushes from the cakes and there is not sign of any contaminiation except for the blue tops of the cakes.

Can anyone explain or give an educated guess.

Cakes are mostly water and water is a good insulator of heat (or cold.) You're lucky, though -- mycelium dies at 106 F, and your oven gets much hotter than that -- she must have caught them before the inside got that hot.

At least that's my only explanation.

Yeah he said the plastic wrap became shrink wrap to the out side of the jar.
