WBS sweet smell

I recently prepared 11 quarts of WBS, and for some reason when I pressure cooked them they started smelling very sweet or almost chocolaty.

I may have made a few mistakes which I will identify:

1.) I used polyfil in the lids of my jars. The tek I followed (Frank's Bulk Tek) instructed to cut a 1 inch hole in each lid, which I think is rather large but I followed it anyway. I suspect that I either did not stuff the lids tight enough with polyfil, OR perhaps when I pressure cooked them water might have leaked in. I covered the lids with foil but the polyfil prevented me from covering them as tightly as I would have liked.

2.) I perhaps PC'd them too high or too long? I used 15 psi for 90 minutes but it just seems weird that they smell like this. Has anyone else had this happen? Maybe since I soaked the grains in coffee they smell like this?

At any rate I was pretty sterile, used a SAB to inoculate a week ago and I have not seen any growth yet. The tek had me use only a few drops of my spore syringe, which seems strange to me because the PF Tek has you using 1cc per jar, which are considerably smaller than quart jars.

If anyone can help me out here I would be grateful

Well I can tell you, a few drops is plenty.
1 inch holes are CRAZY big for jar lids. I cant remember what size bit I used but I can say that my holes are about the size of a pea, and I have never had a single problem with them ever. (my lids are stuffed SUPER tight with polyfil btw).

Just sayin.

Sweet smells like fruit are typically a bacteria, usually bacillus. You'd know if you have bacillus if the grain starts to rot, but it takes at least a few days to start showing after smells start.

1 inch seems way too big to me, but I've also never used polyfil as a filter. I use ez felt which is polyfil that is ironed into sheets. My ge holes are 1/6".

I suspect your ge holes are the problem. I PC at 15 psi for 90-120mins.

Shake the jars up, maybe you have myc growth in the middle. If you don't see anything after a few more days or if the grain starts to rot, I'd toss the grain.

The problem could also be your spores.did you get them from a vendor here? Did you try more than one syringe?

mushroom mycelium smells like sweetness to me.  bacteria laden grains smell like sourness to me.  Molds smell like dirt.

Hmm well I suppose I'll just give it a few days and maybe just get some new jar lids and start over if necessary. I really don't even want to use polyfil cause I found it to be a bitch to stuff into the holes. It's like, how the fuck do you get it to be tight without it either sticking way out of the lid or way into the jar? lol

I think tyvek or filter disk material would suit what you're trying to do just glue a piece over the hole with silicon For what it matters a 3/8 inch hole is about all the bigger I'd go. And you can buy a cheap bit set for under 10$. I just grab a random bit that looks about the size I want the holes. About a 1/4 inch bit seems to work fine for me.

I would venture a guess that your spore syringe was contaminated with bacillus. Do the grains look slimy?
