Golden Teacher Fruiting Questions

Hey everyone,
I'm in the process of fruiting golden teachers. I am 11 days into fruiting and this is all that has happened in this time. There are a couple pins starting, as seen in the pictures.
Also, I noticed some colored marks on some of the cakes - blueish color. I've only noticed it in the past couple days. Could this be contamination starting? Bruising?
Any variables that could be contributing to sub par fruiting and slow response. Already been 11 days.
P.S. - The temperature flirts between 68-70 which is a little low. Also, the humidity is usually at 99%, in the picture it is lower at 93% because I had the lid off for a while fanning.
I did originally dunk and roll these for about 22 hours.
Any insight is appreciated!

Just keep misting and fanning and be patient. The blue is more than likely slight bruising. They can bruise blue from drying out also. Oh and you don't need that much foil per cake. Good luck man

Cut the foil down so it's a circle around your cake,
Show me your whole SGFC please. Digital hygrometers from Walmart or Home Depot are inaccurate.

taGyo is the man for troubleshooting SGFC 
Blue is bruising. Did you handle the cakes recently? Also indicative of drying out 
Be careful not to mist and fan too much

Thanks for the welcome.
Ok, I will cut the foil. I mist and fan 3-4x a day.
They do feel slightly dry - the blue could be from drying out then.
There is about 3 inches of perlite. Should I add more?
Does anyone have a recommended reliable hygrometer that I should purchase?

I don't think you really a hygrometer. If your SGFC is built to spec than your humidity will be good.

Raise it higher.
Use something along the four corners so it blocks less surface area so the holes can breathe. If you have if you have two milk crates this works, if not use some jars or upside down cups.
I can see you went a little drill crazy. That's fine, it looks okay still. Do you have 4-5" of perlite?

Ok,
I did 2 things:
- Raised FC higher on items of less surface area
- Added more perlite to about 4.5" - originally was only about 3"

Here are updated pictures. It is Day 15 in the Fruiting Chamber.
It seems each cake is in different stages of fruiting. 2 cakes didn't fruit anything. The others have just a couple mushrooms on them.
Can I pick just the ones that are ready - and leave the others?
When should I pick them?
