Scheduling Dilemma with Colonized BRF Cakes!

I'm working on my first grow, using the brown rice flour cakes of PF Tek fame. So far it's been a really great experience - 18 days since inoculating on February 8, and all 12 of my half-pint jars are 90-95% colonized with no contamination. However, I was honestly expecting colonization to take 1-2 weeks longer. I'm going to be out of town from March 13-22 and thus cannot have cakes in fruiting chambers during that time period. I was hoping to reach full colonization right before leaving, thus allowing me to leave the fully colonized jars to mature for an extra week while I'm gone and then put them in chambers as soon as I return. So my question is this: Should I go ahead and birth the cakes as soon as they're fully colonized, and pray that the first flush is complete by the time I leave and I can just leave the cakes and shrooms to dry out while I'm gone? Or should I just leave the cakes in the jars, hidden in darkness, and birth them once I'm back in town? To ask this question another way... How long can I safely leave fully colonized BRF cakes in jars? I've done a little searching and found a couple places stating that leaving the fully colonized cakes for 1-2 weeks before birthing is fine, but what about 3-3.5 weeks?
Thanks for the help! Or at least for reading my lengthy description of a stupid scheduling error.

Put them into the fridge. It will slow down the process and allow you to return. Remember you want 1-2 weeks for consolidation of the cake once you reach 100% colonization. The mycelium need time to digest the cake before it will be ready to fruit anyway.
If you stick them in the fridge they should be fine by the time you get back. You might have some invitro pins, but they are going to grow once you put them into the fruiting chamber.

Finally, a worthy use for my little dorm fridge! Lol. Thanks for the advice guys. Should I put the jars in the fridge right before I leave, or as soon as I reach 100% colonization?
