kinda. Except flour is evenly dispersed through the cake and a burst grain will be a clump that potentially won't get colonized in the center. It wouldn't contribute to contamination, but it would be potentially wasted nutrition.

Going to have to disagree with you a little bit here, sir.  Clumping causes areas of depressed gas exchange.  Areas of depressed gas exchange are blooming grounds for contamination.

Maybe to some degree. But I was referring to grains instead of flour in a in PF cake. I think that's what SS was referring to, too. There shouldn't be big enough clumps in that to make a difference.

With clumped grains, I'd be more concerned with it not getting colonized and then spawning it.

A little gypsum helps, but mainly, just make sure that the grain is drier before you sterilize. I read someone here, simmers for 45 or boils for 10. Some just add water and sterilize, but with little experience its going to take some trial and error to find that magic ratio that works for you.  Personally I boil for ten. When the first one pops, get them out. The only time I ever run into burst rye is when I try to rush things. After the boil, some say fan on a towel, some leave them in a colander for a long time and shake periodically, whatever the method, I feel like drier is better. everything likes to eat the chunk of popped grain, and quickly, but without the airspace it takes forever to eat its way to the center, so it becomes a magnet when you case. Its going to take a while for it to go 100% but it can be done, you might want to get a plan B in the meantime though.
