This is a good method for SAB (IMO) but I have a Hood so i have no expertise there.

You know ... that's a good fucking point. I'm still stuck in the SAB mindset.
Changing things up, as long as I remember to grab it with a mitt. 
Edit: How accurate has your IR therm been for you? I've been wanting to pick one of those up for cooking alone, but if it doubles as good for mycology, then it's on the list for real, this time.

I would avoid the fridge...unless your doing a cool weather strain. I usually pour, let cool for an hour, then do your work on them. I wrap them with para-film and place in a alcohol wiped Tupperware container w/lid. I then place in a appropriate temperature environment for that particular strain.

Mine is pretty accurite...depends on the material your reading...you play with it a little bit, and you'll figure it out. There pretty cheap on amazon...and theres several of them.
