Seeking feedback. First Shiitake grow. PICS

Hey everybody! This is my first attempt at cultivating gourmet/medicinal mushrooms, and so I'd like to post some pictures of the projects with the hopes of receiving some feedback from the community. I used RR's methods exclusively as described in his cultivation videos. Oak sawdust was used, and the only thing I had to do differently from the instructions in the video was exclude the wood shavings. All the research tended to agree that the shavings were optional, so only the sawdust, bran, and gypsum was used just because I couldn't get the shavings from my sawdust guy in time for the transfer from spawn run to substrate colonization.
Here's the area I'm using for colonization. The room is kept at a consistent 72F degrees. The lighting is low, natural, and indirect.

There seems to be a lot of liquid accumulating on the bottom:

At what point should these be moved to a fruiting environment? Do they need to brown completely before colonization is "complete"? Can a SGFC be used? What are my next steps?

I just posted my first shiitake grow a few minutes ago. As far as Paul Stamets advice.... wait until you can see about 6-12 primordia and then strip the bag for the first flush. This is his 'fast track' to growing shiitake but I'm not sure if that is your best course.
It is what I did though and ive got some lil guys growing right now after about 30 days colonizing in the bag, then stripping it at first primordia formation.

Shiitake takes 8-12 weeks to colonize in the bag, you want it to develop a brown "skin". then you cold shock it at 40-50 degrees for a few days, then you birth them, slap them, and dunk them for 24 hours in cold (~35-40 degrees) water.
